MATILDE AND THE "ROYAL PASTE"

Matilde di Canossa, also known as Matilda of Tuscany, was a countess, duchess and queen between the twelfth and thirteenth centuries. A woman of great beauty and uncommon strength, she ruled over an ample territory that went from Lombardy to Tuscany and had its center in Canossa, near the town of Reggio Emilia. To her we dedicate this precious masterpiece of the chocolate art, whose protagonist is a recipe from the Middle Ages, almond paste, also known as royal paste, because it is worthy of a king.

 

Ingredients: almond paste 73%: sweet ALMONDS, sugar, glucose syrup, invert sugar, antioxidant (ascorbic acid); coating of white chocolate 27%: sugar, cocoa butter, MILK powder, WHEY powder, emulsifier: SOYA lecithin, vanilla extract. Colorings: Lutein E161b, Bright Blue E133.
